Pesto Pizza



So I decided to continue the theme of pesto by sharing another one of our favorite ways to eat it... Pizza!


We bought whole grain crust, coated it in pesto, and covered it in as many vegetables as we could.


This pie has, mushrooms, shallots, onion, grape tomatoes, white eggplant, and baked tofu.


On this one we loaded it up with, shallot, onion, grape tomatoes, red and yellow peppers, white eggplant and mushrooms.


They cooked in the oven on 425 for 12 quick minutes!


Jared and I both agree that this is our new favorite way to eat pizza.  Who needs cheese when you can have all of this?

Vegan Mofo- Tofu Pesto Sandwich of Love




With loads of pesto in the fridge Jared and I have been putting it on everything, mushrooms, carrots, peppers, cucumbers... you name it and we've probably tried or at least thought about trying it.  We discovered that this sandwich is one of our favorite ways to eat it!


It consists of... sprouted grain toast with one side smeared with vegenasise and the other with pesto and piled high with tomatoes, red onion...


kalamata olives...


and a couple of pieces of cold Basic Baked Tofu out of Appetite for Reduction.



This is seriously the best sandwich I have ever eaten.  It's the perfect marriage of flavors.


We also cut up a sweet potato and baked french fries to eat on the side.  Sweet potato fries are my favorite food, so yum, yum.....double yum!

Presto Pesto





It's the end of the season for collecting fresh produce here in Chicago, so my Mom invited me over to  to cut down the remaining basil from her garden.  Since she knows it's my favorite herb of all she didn't want it to go to waste.  I decided that we'd make Classic Pesto since it's my favorite pesto recipe! 


After my Mom, niece and I gathered all the basil, we found that we had enough for a triple batch of pesto...


We tossed the garlic, toasted walnuts, lemon juice, olive oil, salt, pepper, and basil into the food processor until it was perfectly spreadable and delicious!


It made SO much pesto something tells me that Jared and I will be eating it on everything for a while.

Vegan MoFo- Vegan Big Macs



One of my favorite sandwiches is my version of Big Macs.  Although they are quite different than their McDonalds cousin, do not be tricked... although completely vegan these little guys are far from healthy.


 To create the Big Mac, I start by making a recipe of Veggie Burgers out of Vegan with a Vengeance.  It's the perfect burger recipe for this sandwich because it makes burgers that a super thin and crispy. 
I also make a batch of Special Sauce because it needs to chill in the fridge for a bit.
Special Sauce
1/2 cup Vegenaise
2 tablespoons low fat french dressing
4 tablespoons minced sweet pickles
1 tablespoon minced white onion
1 teaspoon white vinegar
1 teaspoon sugar
pinch of salt
Mix all of these ingredients together and stick the sauce in the fridge to chill.


 Once the burgers are done I melt a bit of Daiya Cheddar Style Shreds on top.  Then it's time to build the masterpiece.  I start with a whole wheat bun then layer from there...  burger with cheese, sweet pickles, minced white onion, shredded lettuce, special sauce, bun... repeat!  This double decker burger is super messy to eat, but is delicious all the way through!

Vegan MoFo-Dinner with the Krogers


Jared's sister Nicole and brother-in-law Chris were in Chicago for a few days, so we had them over for dinner.  I wanted to impress them with how delicious vegan food can be, so I made the best dish I know how to make... Orange Tofu.  Although it isn't a healthy meal it sure was yummy and I'm pretty sure I impressed them with my culinary skills.





We had a great time swapping stories and laughing over dinner.  


For dessert I made Jared's favorite dessert Dream Bars out of Skinny Bitch in the Kitch.  This is a rich and tasteful dessert that doesn't have any processed sugar in it!  It has graham cracker crumbs, sucanut, peanut butter, homemade butterscotch, unsweetened coconut flakes, vegan chocolate chips, and coconut milk.  I love when desserts aren't filled with white flour and sugar.  It just makes them more fun to eat for some reason!  I'm so glad we got to share a meal with Nicole and Chris and I can't wait to do it again!

Following the Vegan Food Pyramid


The big news is that Jared asked me to marry him about a month ago.  With wedding dreams in my mind I have decided to kick my health up a notch with the hopes of a thinner wedding day for me!  
I found the vegan food pyramid online and we have been sticking to it.  This means no processed food, low amounts of fat, and a balance of fruit, veggies, protein and loads of whole grains.  I haven't eaten so much in my life!  In order to eat everything we need to in a day, there is absolutely no room for junk food anymore. 
Here are a few new recipes I tried out over the past week from Appetite for Reduction and Skinny Bitch in the Kitch.  Since both are low fat, high fiber and vegan cookbooks I will probably be cooking out of them for the majority of my meals.

I like to make a big pot of soup to eat throughout the week so I made Bistro Broccoli Chowder from Appetite for Reduction.   It was a creamy soup without the cream. It had onion, garlic, rosemary, potatoes, parsnips, broccoli, vegetable broth and almond milk.


 This is a granola recipe from Skinny Bitch in the Kitch.  It is filled with rolled oats, almonds, unsweetened coconut, salt, maple syrup, canola oil, raisins and currants. It is a high protein and high fiber snack that is delicious mixed into soy yogurt!


The recipe for Quinoa Puttanesca out of Appetite for Reduction is easily one of my favorite dishes that I have made in a long time.  It has quiona, olive oil, garlic, thyme, red pepper flakes, tarragon, marjoram, white wine, kalamata olives, capers, and crushed tomatoes.  Jared and I ate this as slowly as possible because we never wanted it to end.  It was salty, sweet, and tangy all at the same time.  Delicious!


To add more protein to the Quiona I made the Basic Baked Tofu.  This tasted far from basic.  I pressed the tofu for about an hour and marinated it in vegetable broth, balsamic vinegar, soy sauce, thyme and minced garlic for another hour.  After marinating, it baked in the oven for about 30 minutes.  This tofu was the perfect texture.  It was full of flavor and had just the right amount of chewiness.  I made 2 batches of this before the week was over, because it goes well with anything and everything.  We also made the delicious discovery of putting it on whole grain bread with tomatoes and veganaise... Yum!  


For lunches we have been eating Garlicky White Bean Spread out of Skinny Bitch in the Kitch.  I made a giant pot of white beans from scratch for under $2.00 and it made 4 cans worth of beans.  Its a cheaper healthier way of eating beans.   To make the spread I tossed 1 1/2 cups of beans, garlic, olive oil, salt, pepper and lemon juice in the food processor until it was super creamy.  Then I stirred in some fresh basil from my herb garden.  We love this spread and eat it with toasted sprouted bread and veggies.  It's tangy and garlicky and leaves you with rockin' garlic breath! 


This is a salad that we had with lunch along side of the white bean spread.  It had Balsamic Vinaigrette from Appetite for Reduction on itI love homemade salad dressing. Ever since I started making my own dressings I can't  eat the bottled stuff any moreSince this is from a a healthy cookbook it has cashews instead of olive oil to add protein and make it creamy with out the cream.  It's my favorite Balsamic dressing in the world.  Yummers!

Food Adventures in Hong Kong


I spent the past two weeks on the other side of the world visiting friends in Hong Kong, snapping photos and exploring as much as I could everyday.  To be honest I wasn't as strict of a vegan as I normally am, but over all, Hong Kong is pretty vegan friendly.  Here are a few of my favorite vegan meals that I had while I was there!


I had this pasta dish at a restaurant called Jungle Juice.  The name of the place made me laugh because when I think of Jungle Juice I imagine a giant vat of juice, beer, and what ever other liquor college kids have on hand to toss in the mix.  This place, however,  had absolutely nothing to do with college or drinking.  I had the Pumpkin and green bean in light curry over spaghetti and a giant bottle of water to wash it all down.  It was the only vegan dish on the menu, but that didn't stop it form being yummy in my tummy!


One afternoon I met up with my friend Naoto for lunch.  He took me to a Chinese restaurant for Dim Sum.  He order some dishes with meat for him and his brother in law, but stuck mainly to vegan fare.  These were the Vegetable Dumplings.


Pan Fried Turnip Cake with some sort of spicy dipping sauce.

I can't remember what this was exactly, but I do remember that it was sweet and may have been squash.  It was served along side of sugar and was super yummy!


For dessert, we had the Black Sesame Roll


and Pan Fried Water Chestnut Cake. This had to be my favorite thing I at in all my adventures in Hong Kong.  It was sweet, mapely, and crunchy all at the same time!  Delicious!


I went to various markets over my two weeks in Hong Kong I saw some pretty disgusting un-vegan things but I also tasted some of the best fruit that has ever passed my lips.  The mangos were like candy and I have never had kiwi that was as perfect as it was there. I also was lucky enough to see and taste some fruit that I had never seen or heard of before.

This visit to a local noodle shop was one of the craziest experiences of my trip.  When my friend Hugo and I walked we were directed to share a table with two other people.  I was handed a menu that was almost entirely in Chinese.  It had a few words on it in English such as, beef ball, fish ball, soy bean cake and chive.  I looked up at the Chinese waitress and shrugged my shoulders and said, "Ummmm.... I'm not sure what to order.  I just need something with no meat." She proceeded to get obviously annoyed with me and shouted something at me in Chinese. I gestured with my hands as best I could and said "No meat..." At this point the waitress became incredibly angry and she slammed another menu in front of me that was only in Chinese.  She pointed at the menu yelling at me. So I said, " well that is helpful... I'll have chive, soybean cake and NO MEAT!"  Hugo was stumped too and quickly ordered something as best he could as well. She ripped the menu away from me  and stomped off with our orders.  I wish I could tell you exactly what this is and where I ate it, but all I know is that it was a bowl of meat free noodles with tofu and chives. 


The food we got that afternoon at the crazy noodle shop was one of the best meals I had while visiting Hong Kong even though I had no idea what it was I ordered.  Plus it was SUPER cheap!


One evening Chloe took her brother Hugo and I out to the vegan Chinese restaurant Pure Veggie House. We ordered a huge spread of cruelty free food.  We started the meal out with Dim Sum.  This was the Steamed Vegetable Ball.  I like the idea of these little guys and can image that they are really good when done right.  The outside was made out of steamed rice flour but the inside was filled with veggies that didn't have much flavor. 


The Vegetable Dumplings were okay.  They had a little too much oil and were filled with the same exact filling at the vegetable ball, so the inside again did not have much flavor.


The Vegetable Soup Dumpling was good.  It was a salty, vegetabley, stuffed noodle.


The Turnip Pastry was my favorite of the Dim Sum adventure.  It was flaky and delicate on the outside and had a creamy, gooey, turnipy inside... YUM!


We ordered a few dishes to share as a main, but we were pretty stuffed after all that Dim Sum.  This was the Sweet and Sour Konak.  This dish was a bit to greasy for me.  It tasted a bit like fried fried.  I don't know how else to explain it.  It was just too much frying and not enough freshness for me.


The Eggplant and Seitan was my favorite main.  There was very little seitan incorporated in it and although it had a bit too much oil (as Chinese food tends to have) it had plenty of veggies to soak it all up.


The Vegetable Fried Rice was good, but not the best I've ever had.  I did like the addition of pine nuts though.

  
We order a few different things for dessert including a soy pudding which I did not take a picture of.  It wasn't very tasty, it fact I think it was just warmed up silken tofu.  It would have not made a very pretty picture.  This dessert pictured was the Sesame Roll.  It was my second time trying this dessert and I have to say, I LIKE it!


The Red Bean Pudding was my favorite among the desserts.  It was mildly sweet, perfecctly cold and had a nice hint of coconut in the mix.  Yum!

One of my last dining experiences was at another local noodle shop.  This time the experience was a little less fun.  After a long day visiting the Big Buddha, we hopped off the subway at Central and stumbled into the first noodle stop that we could find.  It was a tiny little place, I don't think it even had a name.  When we walked in a woman eating at a nearby table shouted something at us and we quickly figured out by her gestures that she meant to close the sliding glass door behind us. Once we sat down at a table that already had someone eating at it the same woman that yelled at us previously reluctantly got up to take our order.  This time the menu was in English and Chinese, so it made it a little easier to order.  I got the Vegetarian  Dumpling Noodle Soup. The noodles we soggy, the broth was flavorless as were the dumplings.  So, I covered it with chili and it seemed to do the trick.  


My trip to Hong Kong was an amazing experience.  I was very lucky to have been able to spend two weeks with some pretty amazing people and share some delicious meals with them as well.  I cannot wait to go back to show Jared everything that I now know about this unique, bustling, and silly city!
