One evening Jared and I needed a quick and healthful dinner, so sticking with our soup theme we made Spring Vegetable Minestrone out of The Candle Cafe Cookbook.
It was filled with onion, scallions, garlic, tomatoes, zucchini, and white beans and seasoned with fresh basil, thyme and rosemary.
This soup came together in under an hour from start to finish. It was not only quick, but yummy too!
This was the first recipe I've tried out of this cookbook and I was impressed. I can't wait to try more recipes out of this one!
