I Love Bustelo in the Mornings









A friend of mine that lives in South Florida turned me on to Bustelo and I can't thank him enough! It has become my delicious morning ritual. I don't know what I would do without it actually... If you are a coffee lover and you haven't brewed this brand of coffee yet make a stop at Dominick's and pick some up. You won't regret it!

A Traveling Dinner


Tonight Vegan Family Dinner was postponed because I had a Holiday Potluck to attend at my friend Nicole's place in Arlington Heights. I made Caramelized Onion Butternut Roast with Chestnuts (Veganomicon). In order to make this recipe I had to roast chestnuts, which was pretty exciting to me for some reason! The roast turned out wonderfully. I am absolutely making it for Thanksgiving this year. It tastes like a yummy version of stuffing. Even though I was the only vegan there, everyone seemed to love it!

Impromptu Dinner





Saturday night I decided I wanted to cook, so Sarah, Shua, Kipp and I threw together and impromptu family dinner. I made Brooklyn Style Pad Thai (Vegan with a Vengeance)...



After dinner was over Sarah decided to make some Vegan White Russian shots! Yum!




After the 3 bottles of wine and shots, we got pretty silly and decided to venture out to a local pub to have a beer...


On our way out we partook in some illegal recycling...






The night ended with us at the bar and a game of pool where I lost terribly... Impromptu Vegan Family Dinner was a great success!

Vegan Family Leftovers






Since I had So many leftovers from Family dinner on Sunday I invited Shua and Sarah over for leftovers! I threw together some seared green beans and picked up a loaf of bread to eat with the lasgna! Totally delicious! Shua's plate plummeted to the ground right before eating, so we had to share ours with him, but we didn't mind. There was plenty to share!

First Offical Dinner



So my friend Sarah and I have been pulling together to cook at least once a week and been having a blast doing it. Since I am a vegan we cook it up vegan style every time. Sarah isn't a vegan, but she doesn't seem to mind cooking and eating with me. Since we have so much fun in the kitchen together I decided to start a little blog about my food experiences. Tonight was our first official dinner and although I invited others, it ended up just being Sarah and I. We didn't mind one bit! We drank wine and cooked our butts off! Tonight we made Lasagne Marinara with Spinach along with a Salad with Marinated Artichoke Hearts and Garlic Bread with Carrot Cake Cupcakes with Cream Cheese Frosting for dessert. Who says a vegan meal can't be satisfying?

I started by making the Carrot Cake Cupcakes (Recipe from Vegan Cupcakes Take Over the World- Isa Chandra Moskowitz & Terry Hope Romero)



While the cupcakes Were baking I prepared the Marinara Sauce (Recipe from Veganomicon- Isa Chandra Moskowitz & Terry Hope Romero)

As the sauce simmered I made the Cashew Ricotta (Recipe from Veganomicon- Isa Chandra Moskowitz & Terry Hope Romero)





Finally it was time to steam some spinach and put together the Lasagne Marinara with Spinach (Recipe from Veganomicon- Isa Chandra Moskowitz & Terry Hope Romero)While the Lasagna cooked Sarah made a salad with marinated artichoke hearts and some fabulous garlic bread...

and I frosted cupcakes!
Finally the lasagne was ready and we ate...
